A Sobremesa spin on a classic.

Brewed back in December 2024 with Pilsner & Chit Malt from Voyager (NSW).

Hopped in the boil & whirlpool w/ Aramis (FR), Fuggles (UK) & Tettnang (DE) to 34 IBU.

Fermented in puncheons w/ our house mixed culture for 4 months.

Packaged on 21st April 2024 and bottle/keg conditioned for 3 months.

The aroma is warm and inviting — eucalyptus, grandma’s orange marmalade, and star anise. This is all tied in w/ a beautiful brett. character reminiscent of aged hay.

The ester profile is distinct — shaped by elevated fermentation temperature and higher alcohol content — revealing aromas not previously seen in our house culture. It’s expressive, lifted, and uniquely of this batch.

Flavours of lemon squash, fennel bulb, and wildflower honey develop across the palate. Bright acid, clean, dry, and lightly warming — the ethanol present, but not intrusive.
