With this barrel we tried something new.
Instead of rinsing and swelling the barrel w/ 90 C water post emptying we decided to rack fresh saison on top of the residual yeast inside the barrel from a previous fermentation w/ Kveik.

After 6 months we blended on top of red flesh plums from Rayners Orchard in Woori Yallock @ the rate of 350g/L. These were left to interact for 8 weeks. Upon tasting the final product we thought it lacked vibrancy and acidity, so we blended w/ 11% barrel aged saison conditioned on raspberries from the same orchard.

Packaged on 13th Jun 2021 and bottle conditioned for 10 weeks.

Straight raspberries & strawberries on the nose with a herbacious character that reminds us of being out in the bush. There is a tight barnyard funk that elevates the existing components.
On the palate there is a lively acidity and dryness that really carries the flavours through. Notes of candied watermelon & black currant with elevated carbonation.

Please chill upright 24hrs before opening & decant off natural yeast sediment. Naturally carbonated in bottle (she's a lively one).
