We are stoked to present a modern interpretation of saison just in time for the spring weather.
Brewed with 100% Australian grown grains. Floor malted - pilsner, wheat & raw wheat from House of Malt (VIC). Paired w/ Australian flaked spelt & hopped hotside w/ EKG (UK) & El Dorado (US).
Primary fermentation occurred in a single puncheon w/ a blend of saison yeast and brett. strains for 4 months.
This was then dry-hopped in stainless w/ Perle (DE) & Saphir (DE) at the rate of 7g/L - 72 hours prior to packaging. Packaged on June 16th 2022 and can conditioned for 3 months.
Aromas of golden circle - tinned pineapple, grapefruit & pear. On the palate it is full of lemon sherbet & rock melon while still retaining a savoury element through its spicy/piney nature.
Bitter, funky, dry & crisp with an elevated carbonation that ensures another sip.
We have a deep enjoyment for noble hops at Sobremesa and this is the heaviest hopping rate we have employed so far.
The beauty of saison is it's many interpretations and we are only just scratching the surface.
Please store in the fridge upright and decant off the settled natural yeast sediment.
