This is blend of two unique barriques:
50 % | 2 year old old mixed culture saison
50% | 6 month old - open fermented saison
These were blended into our fruiting tank on blackcurrants at the rate of 285g/L for 10 weeks.
Packaged on September 19th 2024 and naturally conditioned in can for 6 weeks.
Jus Rouge is french for 'red juice' and that is exactly what this is.
The aroma is very herbaceous in the way that whole bunch fermentation in wine presents. A real blend of beetroot & raspberry drops rock candy.
On the palate it is tart, tannic and really juicy.
Blood plums & cranberries tie in with a dusty brett. character.
Super dry w/ a perceived sweetness.
