This is a series I always look forward to each year. It's a chance to use hops outside of the norm for Sobremesa and produce something different in the brewery. This version in particular sits closer to the IPA side of the spectrum and we are here for it.
Brewed with 100% Australian grown grains from Voyager (NSW).
Schooner, Vienna, Chit Malt, Winter Wheat & Rolled Oats. Hopped heavily in the boil & whirlpool w/ Motueka (NZ) & Nelson Sauvin (NZ) to 30 IBU.
This beer was co-fermented in 4 neutral barriques with a blend of Verdant & Brett. Brux for 4 months.
This is a blend of all four barriques. We transferred to stainless & dry hopped w/ Motueka (NZ) & Nelson Sauvin (NZ) at the rate of 6g/L for 72 hours prior to packaging.
Packaged on December 15th 2024 and bottle conditioned for 8 weeks.
Orange sherbet, canned fruit salad & subtle notes of pine on the nose.
On the palate it's all bright grapefruit, leather & basil.
Pillowy carb w/ an assertive bitterness.
