Our final blend as Sobremesa and a fitting one.


A collaboration w/ one of the first people to believe in Sobremesa - Tim Sproal from Minim Wine.

This started life back in April 2024. We made the trip down to Castlemaine to collect around 350kg whole bunch shiraz. 13 day carbonic maceration before being foot stomped and left to ferment w/ the resident microbes on the skins. 
Drained and basket pressed to a single puncheon and topped w/ 2 year old brett. saison.
We aged this wine for 2 years and topped every 3 months w/ brett. saison to prevent acetic formation and to incorporate our house characters into the wine. 

Since our first brews in May 2020 we've kept one puncheon that we've never fully emptied. A hybrid solera that's lent its funk to a lot of the blends over the years. It felt only right that this would be the choice for our last blend, our golden barrel.

This is 80% wild ferment syrah grown by minim wines (castlemaine, vic) & 20% our golden barrel.

Packaged on June 1st 2026 with a very small amount of sugar to preserve the fruit characteristics.

Treat this like a chilled red, it'll pick up a little spritz in the bottle as it ages.

Aromas of blackberries, tomato leaf & dusty brett.
The palate is complex and rich, yet fresh and light - very fruit-driven.

As the name suggests we are at peace & disappointed but ready for the road ahead.
