‘Bicycle Day’ // berliner weisse // barrel fermented // 3.6%
Production time / 13 months
Blend / 01
We are excited to release another style that is close to our hearts. Originating in Germany, the Berliner Weisse was incredibly popular in the early 19th century, when more than 700 German breweries produced the style. It earned the nickname “Champagne of the North” from Napoleon’s troops.
This is our interpretation of a berliner weisse. Brewed with 100% Australian grown grains. Floor malted - pilsner & wheat from House of Malt (VIC). Australian rolled rye & oats. Hopped lightly w/ Saaz (CZ).
Fermented in two neutral barriques for 5 months with a blend of saccharomyces, lactobacillus & brettanomyces strains. This is a 50/50 blend of both those barrels. Unfiltered and naturally conditioned.
Packaged on March 21st 2022 and can conditioned for 8 months.
Aroma's of lemon, hay & sourdough. The palate has a sharp but complex acidity, a mild saline character and flavours that are more reminiscent of skin contact white.
Bright, vibrant, refreshing & interesting.
fermented warm | unfiltered | can conditioned | never less
