Bière de Coupage is a French term used to describe the blending of beer, but typically refers to a once common practice of blending old and young beers together. The aim of which was to combine the best characteristics of each beer, particularly the tartness and aromatic complexity of an aged ale, and the vibrancy & freshness of a young hoppy beer.
We have fell in love with this blending technique at Sobremesa and are continuously intrigued by the results.
This blend was a combination of three components:
- 50 % mature saison fermented in a puncheon (10 months old)
- 50 % young saison fermented in two barriques (10 weeks old)
This blend was then dry hopped in stainless w/ Mystic (UK) & Lemondrop (US) at the rate of 4g/L for 72 hours prior to packaging.
Packaged on November 1st 2022 and bottle conditioned for 13 weeks.
Ripe orange, passionfruit and juniper on the nose w/ a lovely integrated funk that reminds us of why we fell in love with brett in the first place.
The citrus continues to the palate but more in a stewed context. Driving acid line, rounded bitterness & fluffy carb that keeps you intrigued.
