This is the start of a beer that we will revisit over time. Divergent thinking will be a platform for us to blend different barrels and dry hop with a range of hops. We just purchased a 10hL conical fermenter which has allowed us to do this and we are pretty excited about it.
This is a blend of two barrels. 63% saison aged in a single puncheon for 11 months and 37% barrel fermented saison aged in a single hogshead for 16 months. The hogshead portion is from our first brew back in May 2020.
Brewed with 100% Australian grown grains. Floor malted pilsner & floor malted wheat from House of Malt (VIC). Australian rolled oats, rolled spelt & rolled rye - hopped w/ Saaz (CZ) & Tettnang (GER) in the boil to 26 IBU.
We dry hopped w/ Saaz (CZ) & Motueka (NZ) at the rate of 5g/L for 72 hours prior to packaging. We then added 3 different strains of brett at bottling time.
Packaged on September 21st 2021 and bottle conditioned for 9 weeks.
For us this is a classic brett. saison and we are pretty proud of the outcome. Aromas of finger lime, tangerine, spice and funk.
On the palate it's all honey & hay with a very mild acidity that adds to the thirst quenching nature.
Super dry, lively carbonation with a clean bitterness.
