Coexistence is a passion project of Hannah's, a unique expression of her love for nature and what we do here at Sobremesa. This is blend 2 and the first time we have created an iteration of an existing project (expect some favourites coming back this year).
Brewed with 100% Australian grown grains. Floor malted - pilsner & wheat from House of Malt (VIC). Australian rolled spelt, rye & oats. Hopped w/ Magnum (DE), Tettnang (DE) & Saaz (CZ) to 26 IBU.
Early on in our barrel program we decided to keep select barrels to use as a solera system. We would pull a percentage of the barrel for blending and refill with either finished beer or wort, never completely emptying the barrel. This is a hogshead from our first brew back in May 2020 for 'our daily brett'.
We took a portion of this barrel fermented saison and conditioned on 2.3g/L of meyer lemon zest from rayners orchard & 30g/L of blue mallee bush honey from starecs bush honey for 20 days.
Packaged on September 6th 2021 and bottle conditioned for 8 months.
Aromas of lemon verbena, rock melon & rosemary. On the palate it has a unique driving bitterness that we attribute to the zest & honey. Preserved lemons, thyme & honeydew.
