Australian rolled spelt \u0026amp; rolled rye - hopped w\/ Saaz (CZ) \u0026amp; Celeia (SL) in the boil to 27 IBU.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eThis beer went through primary fermentation in a puncheon (500L) and a hogshead (300L) for 10 weeks. This was a co-fermentation with our house saison strain, brett. brux \u0026amp; brett. claus. The ageing time was kept short to keep the funk restrained and retain a young, vibrant product.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eOn November 27th 2021, we blended both barrels together and bottle conditioned for 8 weeks.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eAromas of doughy bread, dusty donut peaches \u0026amp; lemon pith. Bright \u0026amp; lifted.\u003cbr\u003eOn the palate it is a lovely interplay between yeast, funk \u0026amp; hop character.
