This beer went through open fermentation during primary at 35C to achieve maximum ester formation. This was then laid to rest in neutral burgundy barriques with our favourite brett. strains for 3 months.\u003c\/p\u003e\n\u003cp class=\"\" data-mce-fragment=\"1\"\u003eThis is a single barrel (B7) blend. Barrel 7 showed strong characters of grapefruit pith, peach skin and orange rind which we thought would be perfect to pair with Australian Galaxy. We dry hopped w\/ Galaxy at the rate of 2.7g\/L for 72 hours prior to packaging.\u003c\/p\u003e\n\u003cp class=\"\" data-mce-fragment=\"1\"\u003ePackaged on October 21st 2020 and bottle conditioned for 12 weeks to achieve ideal carbonation. Aromas of passionfruit, over ripe guava and leather sing on the nose. Aromas of elderflower, mandarin and tomato leaf.
