Brewed with 100% Australian grown grains. Floor malted - Australian ale & wheat from House of Malt (VIC). Australian rolled spelt, rye, oats & barley. Hopped heavily in the whirlpool w/ Motueka (NZ) & Galaxy (AU) to 28 IBU.
This beer went through open fermentation with a Kveik strain called Bergen at 35C to achieve maximum ester formation. This was then laid to rest in neutral burgundy barriques with our favourite brett. strains for 13 months.
This is a 50/50 blend of two barrels that have always been in the back of our minds as IPA driven. We dry hopped w/ Amarillo (US) & Galaxy (AU) at the rate of 6g/L for 72 hours prior to packaging.
Packaged on October 10th 2021 and bottle conditioned for 4 months.
Aromas of freshly zested tangelo, horse blanket, passionfruit & papaya. On the palate it is bitter but soft. Waves of over ripe peaches & meyer lemon sing along side the elevated carbonation.
A really intriguing beer that will satisfy two markets.
