We've started to bring back a few of our favourites since our inception. This one has had a few tweaks this year that have definitely added to the drinkability.
Brewed with 100% Australian grown grains. Floor malted - pilsner from House of Malt (VIC) alongisde flaked rye, barley & spelt. Hopped heavily in the boil & whirlpool w/ Tettnang (DE) & EKG (UK) to 38 IBU.
This beer went through primary fermentation in stainless for 4 weeks with our house saison blend.
We dry hopped w/ Saaz (CZ) & Hersbrucker (DE) at the rate of 3.5g/L for 72 hours prior to packaging.
Packaged on October 9th 2022 w/ the addition of brett. lambicus and bottle conditioned for 4 months.
It's always a joy to see how this beer transforms in bottle, the results are quite unique when brettanomyces is spiked at bottling time. Starting off quite herbaceous early on in the journey and ending more towards the stonefruit spectrum.
Aromas of nashi pear & nectarine with a lovely herbal overtone. Classic saison characters at the fore front. The palate lends to lemon curd & peach with a subtle acidity, driving bitterness and elevated carbonation.
